Quick & Easy Healthy Meals | Food

It's no secret that when it comes to cooking I'm a bit of a lazy girl. It's not that I can't cook, but I really don't enjoy the cleaning up that comes with it, and I don't like recipes with lots of fussing around. Thankfully I married a man who is not only a good cook, but doesn't mind being in the kitchen preparing something new.

So I've been a bit spoiled for a long time, with a Mum, mother-in-law and husband to do all of my cooking. But, there are still times when I have to venture in to the kitchen to do more than cut up some fruit for the girls or cook my famous three ingredient pancakes, or Low Calorie Mug Brownie.



It's on those occasions that I always look for quick, easy meals that will feed me for the least amount of effort (and cleaning up!). I've been on the look-out for quick dinners to add to my repertoire, in an effort to make things easier on myself and take away one of the pressures I've been feeling in regards to my weight. My most favourite of my easy meals is Chicken Salad. And yes, it is as easy as it sounds.

All you need is a BBQ chook and a bag of premixed salad from the supermarket and you're good to go! The best thing about this dinner is that there is always lots of left-over chicken to have on sandwiches the next day and it takes next to no time at all to prepare. Exactly my kind of healthy dinner!

A few of them are super freezer-friendly and it's really nice to know we have stuff sitting in the freezer ready to go when I don't want to cook or do anything else. Meals that I can just pull out of the freezer, whack in the microwave and sit down to eat 5-10 minutes later? Yes please!
